Hear local business owner and founder of the Real Cheese Project championing sustainability and real cheese from the soil up
Surprisingly, cheese has a major environmental and climate footprint, ranking just behind beef and lamb as one of the most greenhouse gas-intensive foods in global diets. So our choice of cheese can have a massive impact on our countryside, our food system and its future.
James Grant from No2 Pound Street in Wendover and The Real Cheese Project will be talking about sustainability through the lens of farming, food and cheese. At the heart of the discussion is soil; how decades of intensive agriculture have depleted it, and how farmers, working more closely with nature, are helping to rebuild fertility, improve biodiversity and capture carbon.
James will explore the power we have as consumers. The cheese we choose can support better farming, protect important traditional foods and help keep the families and communities behind them alive.
